Kohlrabi Schnitzel

2 Kohlrabi
Salt and Pepper
2 Eggs
Paprika
1 cup Breadcrumbs
3 tablespoons Oil


Wash and peel the kohlrabi. Cut into 1/4 inch slices.

In a bowl, add some water and ice. Set aside.

Bring salt water to a boil. Boil kohlrabi slices for 4 minutes. Remove kohlrabi from boiling water and add them to the ice water. Once they have cooled, allow the slices to drip dry.

Get two clean plates and set them side-by-side. On one plate, add eggs and scramble them a bit with a fork. On the other plate, add the bread crumbs, and paprika, salt, and pepper to taste.

Dunk one slice of kohlrabi in the egg. Flip the slice so that both sides are covered with egg. Lift the slice out of the egg, shake off extra egg, and transfer slice to bread crumbs. Coat both sides of the slice with bread crumbs. Repeat with all kohlrabi slices.

Heat oil in frying pan. Fry kohlrabi slices until golden brown. Serve immediately.
