Schinkenknödel   (Bread & Ham Dumplings)

12 slices day-old White or Wheat Bread
1/4 cup Flour
1/2 lb Ham, cut into small cubes
1 small Onion, finely chopped
2 Eggs
1/2 cup Milk
2 teaspoons chopped Parsley
2 teaspoons chopped Chives
Salt
Thyme


Cut the bread into small cubes. Add to a bowl and pour milk over the bread.

In a frying pan, melt butter. Cook ham and onions in the butter until golden brown.

Add onions and ham to the bread cubes, along with the parsley, chives, flour, salt, thyme and eggs. Gently knead the mixture with your hands.

With wet hands, form ball-shaped dumplings.

In a large cooking pot, bring salt water to a boil. Drop dumplings into the boiling water, then reduce heat to a simmer. Allow to cook for 10-15 minutes. The dumplings are fully cooked when they float to the top of the water. Remove from water and serve immediately.

Schinkenknödel taste great with some cheese melted over them. They also go well with salad.
