Spätzle mit Kraut   (Spätzle with Cabbage)

1 Green Cabbage (about 1.5 lbs), shredded
1/2 lb Spätzle
1 tablespoon Sugar
1 Yellow or Sweet Onion, chopped
1/2 cup Beef Broth
1/4 lb Bacon, cut into small pieces (add more if you prefer!)
Salt, pepper, ground caraway (to taste)

Cook the Spätzle in boiling salt water until soft.

In a large frying pan, fry the bacon until the fat is rendered. Remove the bacon and set aside (you'll be adding it back in later.) Add onions and cook until transluscent. Add sugar and cook until mixture begins to caramalize slightly - do not let the mixture burn! Mix in the cabbage and bacon. Cook this mixture for a few minutes, stirring frequently, then add the broth. Cover and cook until the cabbage is soft. If necessary, add more broth or water to keep it from getting dry.

Mix the Spätzle into the cabbage mixture. Add salt, pepper, and ground caraway to taste. Remove from heat and serve immediately. Enjoy!
