Gurkenspätzle   (Spätzle with Cucumbers)

Fresh Spätzle or 1 package dried Spätzle (available at most German Delicatessens)
2 tablespoons Butter
4 tablespoons Flour
1 cup Chicken Broth
Salt, Pepper
2-3 tablespoons Vinegar
1 Bay Leaf
2-3 Dried Cloves
1 Onion, finely chopped
1 Cucumber, peeled and sliced
4 slices Bacon, fried until crispy and crumbled into small pieces (optional)


Prepare Fresh Spätzle or cook dried Spätzle according to package instructions.

In a large pot, melt butter. Mix in flour. Mix in chicken broth. Season with salt, pepper, and vinegar. Add onions, bay leaf, and cloves. Allow to simmer until sauce gets creamy/thick.

Add cucumbers to the sauce and cook an additional 10 minutes.

Remove bay leaf and cloves. Pour sauce over Spätzle. Garnish with bacon pieces. Serve immediately.
