Glühwein   (Mulled Wine)

Glühwein is an hot drink enjoyed during the Christmas holidays and throughout the winter months in Germany. It is made from red and various spices, then heated just below the boiling point so that the alcohol doesn't evaporate.


4 1/4 cups Red Wine (choose a full-bodied one)
1/2 cup Water
1/4 cup Sugar (or less according to taste)
1 stick Cinnamon
3 Cloves
Zest from half of a lemon


Combine water, sugar, and spices. Bring to a boil. Remove from heat and allow to sit for 30 minutes.

Add red wine to the water mixture and re-heat until just before boiling. Serve immediately.

Variations:

Seehund Use white wine instead of red wine. Depending on the acidity of the wine, a little lemon juice can be added to taste. Prepare as described above.

Honig (Honey) Glühwein Combine red wine with 1/2 cup honey, 1 cinnamon stick, and 2 slices lemon. Heat until just before boiling.
