Vanilla Sugar (Vanillezucker)
Vanilla sugar is used in many German baking recipes. Vanilla sugar is made from granulated sugar, in which vanilla beans have been soaking or in which vanilla extract has been mixed in. The sugar picks up the vanilla aroma and a hint of vanilla flavor.
Vanilla sugar has a variety of uses. It can be used in baking cakes, cookies, pastries, and desserts. It can be added to frostings, whipped cream, and filling. It can be sprinkled on baked goods as decoration and additional flavoring. It can be sprinkled on fruits and cereals. It can be added to coffee, tea, milk, juice, and yoghurt.
Packaged vanilla sugar (each package is .32oz / 9g) is produced by the Dr. Oetker company. This vanilla sugar is made with "vanillin," an artificial vanilla flavoring. Vanillin is a flavor and aroma compound found in vanilla pods. Vanilla pods contain approximately 2% by dry weight vanillin. Dr. Oetker also makes an all-natural vanilla sugar, also available in small .32oz packages.
