Kokos-Mandel-Makronen
(Coconut-Almond-Macaroons)

3 Egg Whites
1/2 cup + 2 tablespoons Sugar
1 package Vanilla Sugar
3/4 cup Shredded Coconut
2 1/4 cups Almonds, finely ground
1/2 cup shredded White Chocolate
30 Almonds, skins removed
Preheat oven to 325°F (165°C).
Whip egg whites until they are thick and foamy (only until soft peaks form). Fold in the sugar, vanilla sugar, coconut, ground almonds and white chocolate.
Line a baking sheet with parchment paper (or grease the baking sheet). Place spoonfuls of cookie dough onto the baking sheet. Top each cookie with a whole almond.
Bake cookies for 25 minutes or until golden brown.
