8 oz Puff Pastry (pre-made, frozen)
2 tablespoons Butter
1/4 cup Sugar (for extra crunch, use coarse sugar)
1 package Vanilla Sugar
Extra Sugar
Preheat oven to 395°F.
Thaw puff pastry according to package instructions. Prepare a cookie sheet by greasing it with butter and sprinkling it with just a little bit of water.
Melt butter and allow to cool.
Place puff pastry sheets on top of each other. On a floured surface, roll out dough to a rectangle. Brush dough with melted butter. Combine sugar and Vanilla Sugar and sprinkle evenly over dough.
Roll each long side of the dough up toward the center of the dough, rolling only so far that each side comes to the center, as shown in the photo below. The two rolled up sides should touch each other.
Refrigerate the dough until it is firm enough to slice.
Slice dough into 1/4 inch slices. Place cookies on baking sheet. Bake for 15 minutes. While the cookies are still hot, sprinkle some extra sugar on them.
