Grüner Spargelsalat mit Kräutersauce
(Green Asparagus with Herb Sauce)
1 1/4 lb Green Asparagus
Water
1-2 teaspoons Butter
2-3 medium Onions
7 tablespoons mild Oil
4 tablespoons Vinegar
Salt & Pepper
Sugar
4 tablespoons chopped fresh herbs (such as Parsley, Dill, Chives, Oregano, Tarragon, etc.)
2 hard-boiled Egg Yolks
Chopped Chives
Wash the green asparagus and cut off bottom 1/4 inch of the stem. Add water to a large pot. Add asparagus to the water along with 1/2 teaspoon salt and butter. Bring to a boil and let asparagus cook for 10-15 minutes. Drain the asparagus, then arrange them on a serving platter.
To prepare the herb sauce, finely chop the onions. Add to a mixing bowl. Add vinegar, oil, and chopped fresh herbs. Add salt, pepper, and sugar to taste. Pour sauce over the warm asparagus.
Finely chop the 2 hard-boiled egg yolks. Sprinkle over the asparagus. Likewise sprinkle the chives over the asparagus.
