Handkäse a la Walter
(Handkäse & Orange Dessert)
1 Handkäse Roll (7 - 8 oz)
1 Blood Orange
Juice of 1 Orange
Candied Cherries
3 tablespoons Orange Liquor
Sugar
Preheat oven to 320°F (160°C).
Cut the Blood Orange into slices, removing any skin and seeds.
Mix orange juice and sugar (to taste). Boil until liquid is about 50%reduced. Add cherries, blood-orange slices, and Orange Liquor. Allow to cook for another minute.
Allow the Handkäse to get warm in the oven. In the meantime, arrange the dessert plate by spreading around some reduced sauce and fruit. Once the Handkäse is warm, place in the center of the sauce. Serve immediately.
