Kokos Marzipan Makronen
(Coconut Marzipan Macaroons)

3 1/2 ounces pure (raw) Marzipan
1 Egg White
3 1/2 ounces Shredded Coconut
1/2 cup Powdered Sugar
Zest from 1 Lemon
Juice from 1/2 Lemon
Preheat oven to 350° F (175° C).
Shred the marzipan. Add the egg white (unwhipped) and mix until blended. Mix in the powdered sugar, coconut, lemon zest, and lemon juice. The mixture should be sticky not be too loose ... it should hold together. If it seems too loose and doesn't hold together, add a little extra powdered sugar to get it there.
Drop spoonfuls of the dough onto a parchment-paper lined baking sheet. Bake for about 15 minutes or until lightly golden brown.
For added decoration (and flavor), drizzle the cooled cookies with melted chocolate. Allow chocolate to cool completely before storing the finished cookies.
