5 1/4 cups ground Almonds
2 1/2 cups Powdered Sugar
2 teaspoons Honey
2 teaspoons Cinnamon
2 Egg Whites
Powdered Sugar for rolling out the dough
For the Glaze
1 Egg White
1 cup Powdered Sugar
Preheat oven to 300°F (150° C).
In a large mixing bowl, combine almonds, powdered sugar, honey, and cinnamon. Add egg whites, and using a mixer, incorporate egg whites into almond mixture. Continue mixing until a dough forms.
On a work surface dusted with powdered sugar, roll out the dough to a thickness of 1/4 inch. Using a star-shaped cookie cutter, cut out cookies. Place cookies on baking sheets lined with parchment paper.
To make the glaze, use a mixer to combine the powdered sugar and egg white. Continue mixing the egg white mixture until soft peaks form (it should not be liquidy).
Spread a little egg white meringue onto each cookie.
Bake cookies for 15-20 minutes. Cookies will still be soft. They will firm up as they cool.
